So....We Got Hungry...

I have this slight obsession (as I am SURE that a lot of you do by now...) with a well-known little website called PINTEREST. Holy Moly...you can find SO many things through Pinterest. I am always showing Casey the cool things that I find on there....and he usually seems to roll his eyes at me and tell me what a waste of time it all is.............UNLESS it's an idea for a future house to build or cool new recipe! You see, I have a husband who really likes to experiment and cook new random good dishes. I love that about him! I seem to always stick to the same 'ol faithful recipes when I am cooking....but not Casey!

This morning I was so pregnantly exhausted that we decided to skip church, sleep in, and just lay in bed for a while and do nothing. I, of course, grabbed my iPad and started looking through all of your fun pins! One of my sweet friends posted THIS little recipe for homemade chicken nuggets......

So we decided that we would try them for dinner tonight! While preparing our groceries...we then found THIS great recipe for Chick-Fil-A type nuggets too! So...we got a little crazy and tried both recipes out!

Oh my word...you MUST go to these two fun blogs, grab the recipes, and try them out for yourself! Casey and I are obsessed! They were both equally good and the Chick-Fil-A ones really tasted pretty dang close to the real deal!

I just wanted to share those with you all really quickly before I slipped into a heavy food-coma!

Yummy In My Tummy!

I just have to share this AMAZING recipe with you all! It's been in my family for a long time. I remember my great grandmother making these when I was younger. This is my favorite meal and one that I make for all of our friends!
SQUASH ENCHILADAS
Filling Mixture :
  • 4 large squash - sliced and cooked (I boil mine for about 10 minutes and drain it)
  • 1 teaspoon salt
  • Black pepper to taste
  • 1 jalepeno pepper – chopped (i use jarred peppers, they work the best)
  • Chopped red onion – just a small amount, to taste
  • 3 tablespoons Hidden Valley Ranch dressing
**Mix all of the above together**
Sauce :
  • 1 can cream of mushroom soup
  • ½ cup of milk1 jalepeno pepper – chopped (i use jarred peppers, they work the best)
  • 3 tablespoons Hidden Valley Ranch dressing
Remaining Ingredients :
  • 1 package flour tortillas (I have used wheat and they work well too!)
  • 8 ounces shredded cheddar cheese
Directions:
Mix sauce in a bowl and set aside. Mix the filling in a separate bowl. Soften tortillas in the microwave (about 5 seconds). Put two big tablespoons of the filling mixture in each tortilla and roll up. Spray baking dish with PAM and lay each roll in the baking dish, side by side. Repeat until all of the filling is used. Pour the sauce mixture over the top. Spread the shredded cheese over the sauce. Bake at 350 degrees for 10 – 15 minutes or until good and bubbly.
I always serve these with Mexican rice and black beans!
Honestly, they sound kind of odd...but they are so stinking good!! I always have people asking for the recipe...so I thought I would share it with my blog friends too!

DELICIOUSNESS!

If you like Chicken Salad...make this! It's another easy one! Obviously...I have to have easy recipes when we both work all day and we are worn out by the time we get home! The last thing I want to do is make a big hard meal! But sometimes I will get motivated to do so! My mom gave me this recipe and I am not sure where she got it...but this one and my mother-in law's chicken salad are my favorites!


TERRI'S CHICKEN SALAD

(clearly we kind of wing-it on this recipe..so judge the measurements to your liking!)


TWO cans of cooked chicken (or you can cook your own!)

Light Mayo

Purple Grapes Sliced in Half

Celery - Chopped

Carrot - Shaved

A Pinch or Two of Dill


Mix all of this together and VOILA! It's great on croissants and a super easy and filling meal!

EASIEST MOST DELISH RECIPE!

I made these last night with a casserole dish that we were having for dinner. I had made them about a year ago and I don't know why I never made them again! I remembered really liking them but for some reason I was thinking that it took alot of effort or something...BUT...it doesn't!!! Make them tonight to go along with your dinner! They are easy and so super delicious! Casey literally asked me why I didn't make them every night!



Paula Deen's Garlic Cheese Biscuits
Ingredients:
1 1/4 Cup of Biquick
1/2 Cup Grated Sharp Cheddar
1/3 Cup of Water
Garlic Butter:
1/2 Stick Butter
1/4 Teaspoon Garlic Powder
1/4 Teaspoon Salt
1/8 Teaspoon Dried Parsley Flakes
Preheat the oven to 400 degrees F. Spray your baking sheet so they don't stick!

Combine the biscuit mix and cheese in a small bowl. Add the water and stir just until combined. The dough will be slightly moist. Drop the dough by tablespoonfuls onto the prepared baking sheet. Bake for about 10 minutes, until the biscuits are firm and beginning to brown.
While the biscuits are baking, make the garlic butter. In a small bowl, combine the butter, garlic powder, salt, and parsley flakes. Mix well. As soon as you bring the biscuits from the oven, brush them with the garlic butter using a pastry brush.
How easy is THAT?! This recipe made about 8 biscuits for us! They kind of taste like Red Lobster's biscuits...if you have ever had them! But ummmm...we only had one left when we went to bed last night! OOPS! :) I wish I had a picture for you but I don't! They don't look perfect when you cook them... they are actually pretty lumpy looking! But they are easy and delicious!!

Recipe of Deliciousness!

This recipe is actually my Mother-In-Law's and it is absolutely one of my favorite desserts! She usually has some made when we are in town and I LOVE it! I specifically remember when Casey and I were first dating, we were both in town to see eachother (we were about 7 hours long distance for the first 9 months of our relationship)...we were hanging out at his parent's house watching a movie one night and I kept sneaking in and out of the kitchen to get another bite of this deliciousness! I had never had it before and it rocked my world! Plus, it is SUPER SUPER easy to make! If you love cheesecake...you will LOVE this!



SOPAPILLA CHEESECAKE

2 cans of crescent rolls
1 cup sugar
1 teaspoon vanilla
2 (8 oz.) packages cream cheese, softened
1 stick butter
  • Preheat the oven to 350 degrees.

  • You will take a 9 x 13 pan and spread the first can of crescent rolls across the bottom like a sheet.

  • Then mix together the vanilla, cream cheese, and sugar until it's creamy. I personally like to use a hand mixer, because it gets the job done very quickly!

  • Next, you will spread this mixture across the crescent rolls that you laid in the pan.

  • Cover the mix with the other can of crescent rolls like a sheet.

  • Take your melted butter and pour this over the top. I also like to take some of the pre-mixed cinnamon and sigar and sprinkle that all over the top.

  • Bake this in the oven for 30 minutes and Ta Da!

I promise you will love this! How easy is that?! I love simple recipes like this...they save so much time and money! I wish I had a picture to show you...but I don't! Sorry! :) If you know me, you know that I LOVE cream cheese...(cream cheese on wheat thins, cream cheese on ritz crackers, cream cheese mixed with rotel....) so this dessert hits the spot!

When I was little, I remember that my mom had a little cookbook book that was all recipes with THREE ingredients....or maybe it was FIVE... whatever...there just weren't many! I think I need to find a cookbook like that! Casey might kill me if I had another cookbook though! We got so many when we got married and I love them! I just love reading them...I really haven't cooked much out of them I feel like. There are just so many random recipes in there that I really don't think we want to try! But I do love Paula Dean's cookbooks...since she is southern, she has more practical recipes! Plus...I just LOVE that accent of hers! It cracks me up!

Well...I must get back to work! Today is going to be a loooooooong day for me.
